Sparkling Pear Cider fermented on red grape skins and bottle fermented with wildflower honey.
This experimental pear and red wine grape co-fermented cider has high acidity that hits the front and the back of the palate as flavors of prickly pear, hibiscus tea, and spicy pepper linger on the finish. Surprisingly complex with more body and tannin usually found in cider with a funky kombucha-like finish.

The perfect Pet-Nat for the warmer weather! Hazy, Funky, Fruit Forward, Tart Berry, FUN! The grapes are pressed after a short maceration and fermentation starts in stainless steel. The wine is bottled under a crown cap before fermentation ends for natural carbonation. No sulfites added.
A cool weather varietal indigenous to Austria most likely dating back to the Roman times. A versatile food wine with an everlasting, racy acidity profile and light body. Intense aromatics of lime and green apple with flavors of grapefruit and white pepper.
Aromas of honeycrisp apple, pineapple, overripe mango awaken the senses. Flavors of lychee, fresh apricot, honeycomb, and a zip of key lime dance across the palate. A nutty dryness lingers on the finish. A rare twist on a classic Rhone blend with the addition of Chardonnay.
Chardonnay was pressed whole cluster into a stainless steel tank and the malo-lactic fermentation was blocked. Viognier was picked early to add fruitiness and acidity. A small percentage of Roussanne was barrel fermented and aged in neutral french oak.
Bordeaux varieties picked early and sent directly to the press. Limited skin contact time helped to develop a coral color with orange hues. Lush overripe peach, watermelon, and raspberry aromatics. Complemented by flavors of blood orange, ruby red grapefruit, and cantaloupe.
Fermented dry with a commanding acid profile. 50% of the lot was barrel fermented in neutral french oak, previously holding a red wine. A complex medium bodied Rosé that can stand up to even the spiciest of foods.
31% Carbonic maceration reveals black cherry aromatics, combined with German chocolate cake and a faint touch of tobacco.
An acid driven food wine, medium in body with a low tannin profile. Extended lees aging and daily stirring of the neutral french oak barrels adds volume to the wine. Racked only once, minimal sulfites added at bottling. Your new favorite house red.
A rare bordeaux inspired blend of Malbec and Petit Verdot. Structured and full bodied blend full of concentrated black and blue fruit flavors. Soft, velvety tannins compliment a brown spice and white pepper bouquet. Black currant, cooked plum, and clove are predominant with vanilla bean and mocha on the finish.
A full bodied, robust red with blackberry fruit and generous tannins on the palate. Perfumed notes of cedar, dried herbs, and violet lace the bouquet. 89% Petit Verdot was co-fermented with 11% Viognier to lift the aromatics, soften the tannins, and add a smooth, unexpected complexity. Often blended as a supporting varietal, it is quickly becoming a standout for New World wineries.
A rare and intriguing full bodied white wine with an oily texture and honeyed richness. Normally used as a blending grape. Aromas of lily, pear and baking spices complement the flavors of guava, baked apricot and almond on the finish.

Intense flavors of black cherry are balanced with a subtle but complex tobacco leaf finish. Awarded DOUBLE GOLD at the 2021 Colorado Governor's Cup Wine Competition.

Spontaneously fermented with native yeast from previously pressed grape skins still containing residual amounts of sugar from the 2020 harvest. We perpetually upcycled our natural byproduct, by steeping the skins in carbon filtered water, adding a small percentage of Rosé wine after fermentation for stability. Fermented dry with a light, refreshing body, and minimal tannins.
Together with The Infinite Monkey Theorem, we have collaborated on a project called The Ignition Alliance that will donate 20% of proceeds The Wildland Firefighter Foundation, an organization that provides help to the families or wildland firefighters who have lost their lives or are injured in the line of duty.
This red blend (69% Petite Pearl, 31% Verona) features two American cold hardy varietals with fruity aromas of cassis, Kirsch and savory German chocolate cake. The acid profile is prevalent early on with this lush medium bodied and low tannin wine. Black cherry and plum open to lingering coconut, tobacco, and vanilla flavors on the finish.
We found our first vintage of Malbec with intensely deep black and blue fruit flavors complimented with the spiciness to match matured quite nicely in American Heavy Toast
Oak. The character of the barrel contributed to the wine, and the flavors mellowed smoothly in unison. A structured and full bodied blend full of rich concentrated flavors. Velvety, encompassing tannins accompany a clove spice and jammy bouquet. These unique barrels impart flavors of caramel, spice, and roasted coffee with hints of vanilla and butterscotch.
A commanding acidity profile is harmonized with a medium-dry structured body and a steely minerality. Honey blossom and cantaloupe aromas are complemented by lingering guava and Crenshaw Melon flavors. Inspired by classic, Old World techniques the juice was oxidized and fermented at low temperatures. An early bottling followed at the end of winter. This Reisling was built to age for years.
