Candied apricot, peach pit, & baking spice aromas are balanced with the fruit of pink lady apple & pear skin flavors. A moderate acidity & textured light body. Dry & complex but layered with additional asian pear and wet stone on the finish.
Grown with a focus on sustainability. These grapes are farmed on alluvial soils mixed with larger volcanic strata. A properly managed, umbrella like canopy allows for just the right air flow and dappled sunlight onto the clusters to achieve maximum quality. The soils of the vineyard site enhances the expression of character for each variety and lends to the uniqueness of the wine.
Whole cluster skin soaked for 12 hours of contact time before pressing to stainless steel for fermentation. Natural malolactic conversion conducted in neutral French oak barrels with extended lees aging back in stainless steel barrels.
