TASTING NOTES
A rare and intriguing full bodied white wine with
an oily texture and honeyed richness. Normally
used as a blending grape. Aromas of lily, pear and
baking spices complement the flavors of guava,
baked apricot and almond on the finish.
WINEGROWING
Grown with a focus on sustainability. These
grapes are farmed on alluvial soils mixed with
larger volcanic strata. A properly managed,
umbrella like canopy allows for just the right air
flow and dappled sunlight on to the clusters to
achieve maximum quality. The soils of the
vineyard site enhances the expression of
character for each variety and lends to the
uniqueness of the wine.
WINEMAKING
Whole cluster crushed and fermented in neutral
French oak barrels, further employing a daily
stirring regiment as the wine slowly completed
Malo-lactic fermentation. This helps to build
body and richness by re-incorporating the fallen
lees. The wine continued to age in barrels until
bottling the following late spring. Minimal sulfites
added at bottling.
