What an incredible blend! Seriously. And a mistake when I blended it. But a few prayers later, and the confidence to fix the problem and voila, I think we made a better wine than the original design. To make this wine, chambourcin with frontenac aged 2 years in 16 year old oak was base 1. Base 2, Mourvedre 2021 aged in 2 year old barrels. Add in Barbera 2021 aged in new oak and voila, you got something. But what did I do? Somehow, some way, I skipped the Barbera and added a second barrel of Mourvedre. Dang, this doesn't taste right. The bitters are off. Time to "go Europe" so we opened several cases of Seyval Blanc to soften the edge. Getting there. Oops. Now, I see the problem. Ugh! The fix? Take some of the blend, refill a barrel and then add a barrel of Barbera. AMAZING! The fruit, the finish, the OAK!! We have a cornucopia of different aged barrels in use providing unique layers of oak flavors. Even if you say you don't like oak, give this wine a try!! Seriously.
