"Skin Macerated"
Insieme Wines 2018 Sauvignon Blanc was aged for 24 months in Stainless Steel and neutral cask to enhance its profile and mouthfeel. 20% of the finished wine was aged in slightly neutral French oak barrels. The grapes were destemmed, crushed and soaked on skin for a full 24 hours prior to pressing to extract their natural tannins and phenolic composition. It has a rich golden color derived from its skin.
The bouquet is fresh and crisp. It opens with aromas of Acacia, white peach and melon. As it opens the nose tends towards passion fruit, canned asparagus with a touch of herbs and lemon soufflé. The mouthfeel is crisp and dry, medium+ viscosity but still smooth and lush. The palate opens to roasted pears, lemon curd, melon and grapefruit. With a little time, it opens to Lychee fruit, gooseberry with hints of canned peas. The finish is fairly long for a Sauvignon Blanc with hints of barrel lees, honey, gunflint and honeysuckle.
