Crisp and clean with lychee fruit notes and a delicate rose petal finish, the 2023 Gewürztraminer its a delightful expression of our 40-year old vineyard. Pair with Asian inspired dishes or, remain true to its origins and pair with hearty Germanic fare. Production: 64 cases In the Vineyard The vineyard, still recovering from the disastrous 2020 freeze, produces a lighter than average crop. The retraining necessary to re-establish the vineyard allows us to craft a better trunk and cordon system on all of the vines in the vineyard. Improved fruit exposure grants us a crop that is beautifully ripe and very fragrant. We harvest into small lugs on October 21 through October 25. Brix: 24.5 pH: 3.09 TA: 7.65 g/l . In the Cellar Preferring a crisp, well-balanced finished wine, no adjustments are made prior to fermentation. A portion of the crush is allowed to rest on the skins for 4 hours while the remainder is pressed immediately. Following an overnight settling, the clear juice is transferred off the lees and inoculated. The cool fermentation proceeds slowly to dryness on November 14. Malo-lactic fermentation is prevented and the stabilized wine is filtered and bottled for March release. At Bottling: Brix: 0.6 pH: 3.19 TA: 7.4 g/l
