The objective at Pollak Vineyards is to make our Sauvignon Blanc “old world style”. We believe in preserving the natural acid, and reducing the contact of the pulp to the skins, to help achieve this goal.
The 2021 Sauvignon Blanc was picked on August 17th at 20 brix for 3.2pH and the light and heavy press fractions were fermented separately. Shortly after the end of fermentation, the 2 wines were combined and aged 7 months in concrete on fine lees.
