Holiday Cider Trio

For this release, we chose our favorite ciders to celebrate the upcoming holidays. They also happen to be ciders made with varieties that have some exceptional cider-making qualities. The 2022 Redfield Wickson Crab is a still cider made primarily with Wickson Crab - a variety that has quickly become one of my favorites to work with as a cider maker. This cider, bursting with stone fruit and notes of white grape, could easily stand in for a dry riesling and has quickly become one of my favorites. We only made 20 cases and it is going quickly, so I wanted to share it with you before it is gone. Golden Russet Porter’s Perfection (what we lovingly call our Golden Perfection) has become our most popular varietal cider since we first started making it in 2017 and for good reason. This marriage of two of the most reliable varieties in our orchard has won numerous awards over the years we have been making it and the 2021 vintage is no exception - a beautifully complex cider with a tannic structure and the honeycomb notes we have come to expect from Golden Russet. Rounding out this release is our 2021 Porter’s Pommeau. Made with cider we had distilled at Rootstock Cider & Spirits and a fresh juice component comprised of some of our favorite late-ripening apples, this Pommeau is beautifully balanced, complex, and smooth; the perfect way to end the day in front of the wood stove or share with friends after a decadent meal. The name Shin Hollow pays tribute to one of the old nicknames for Trumansbrug (the village our farm borders) and invokes our wilder side. This cider is highly tannic, yet smooth and full of character, reminiscent of a traditional West Country cider. Tasting Notes: Lively effervescence, robust earthy tannins and buttery nose, all joined together with a yeasty wild character. Ashmead’s Kernel and Reinette Musquee (Margil), both classic russet apples, originated in England and France respectively in the early 1700s. They are cherished for fresh eating as well as their cider making qualities. In the cidery: Pressed a week after harvest, co-ferment, DV10 yeast. Secondary fermentation in the bottle, left on the lees. In the glass: Spicy acidity, soft tannins, cooked peaches, dry autumn leaves, honeycomb on the finish. This cider is made with love and care in support of the fight for racial equity and justice. 100% of the proceeds from BIG go to 2 local (to us) non profit organizations who's work we admire. In the Cidery: A field blend of Harry Master's Jersey and Wickson Crab from Black Diamond Cider pressed in early November, combined with cider made from Goldrush, Brown's Apple, Zestar, Harry Master's Jersey, Stokes Red, Liberty and Rubinett from Redbyrd pressed in October and December. A fortified blend of slightly fermented fresh cider and oak-aged apple eau de vie distillate. Enjoy it with dessert or by the fireside. In the cidery: Eau de Vie distilled from our own fruit in 2018, aged in French oak barrels for 2 years and then blended with fresh juice from the 2021 harvest. Further aged in stainless with French Oak chips for an additional 8 weeks, bottled July, 2022. In the glass: Velvety tannins and a smooth finish. Fragrances of ripe apples, and vanilla. The identity and origin of Geneva Tremlett’s Bitter is unknown. It was imported from England for the Geneva, NY apple collection in the 1960s, thought to be the English cider apple Tremlett’s Bitter. Whatever its true name may be, Geneva Tremletts has established itself as one of the few bittersharp cider apples that can stand on its own in the bottle. This single variety cider with is cold fermented and then put through a secondary fermentation in the bottle using both wild and cultured yeasts. In the cidery: Harvested in mid-September and sweated for two months before pressing, DV10 yeast. Bottled after 2 months aging, secondary fermentation in the bottle, left on the lees. In your glass: Aromas of green apples and citrus, bold tannins, racy acidity, lingering finish. Varieties: Geneva Tremlett’s (90%), Harry Master's Jersey (10%) 7.5% ABV 0% RS
