This is my favorite co-ferment right now. it's tasting perfect! The pears add a titch of sweetness because they contain sorbitol which is unfermentable, making them a perfect match for the Mondeuse! A co-fermented PetNat of ¼ Mondeuse Noir grapes biodynamically farmed from Johan Vineyards and ¾ biodynamically farmed pears from Mt Hood Organics.
