Following the ancient method, Methode Ancestrale, this "Pet-Nat" was bottled before completion of fermentation, trapping the CO2 produced in the process inside the bottle and creating a light and fizzy natural style sparkling wine.
The 2023 vintage is a gently sparkling estate rosé blend of 60% Cabernet Franc and 40% Cabernet Sauvignon with notes of grapefruit, strawberry, and orange blossom on the nose. On the palate, wet stone, briny, dry—yet round, mouth watering acidity keeps it fresh and balanced, white peach, starburst, citrus pith.
