Sourced from Certified Organic Coventina Vineyards in the Rogue Valley AVA. 30% Whole Cluster fermentation. Aged in French Oak for 11 months, 30% of which was new. While some acidulation was required, no synthetic additives or enzymes were used. This wine is unfined an unfiltered, and is lush and inky and ready to go. Perfect companion to lamb, venison and Wagyu beef, or on its own while enjoying a fire and a good book. Drink now through 2035.
