2016 Mangy Method Champenoise, Blanc De Noir of Barbara

Done as a collaboration with the Denver brewery, Black Project Spontaneous Ales. We supplied them with the Barbera grape juice, they supplied us with the barrels that had aged a Belgian Golden Ale. We first created a Rose from the Barbera grapes and then aged it in the Black Project Barrels. We then bottled the wine and added sugar which re-fermented in the bottle and capped. Next we "riddled" the bottles which moves the yeast into the neck and then froze the neck and disgorged the plug containing the yeast and finally corked and caged the bottle. This process brings forward fruity tropical flavors of mango and papaya. It is delicious and creative and absolutely like no other champagne in the world.
