Tempranillo, the Spanish “Noble” grape, is the dominant varietal used in the production of Spanish Rioja. California has seen a recent surge in single varietal wine production using this grape. Wine from this grape may be aged for several years or enjoyed when young. Ruby red in color, Tempranillo exhibits tones of plum, berry, herb, leather, and Spanish olive. Tempranillo pairs well with strong cheeses, chocolate, red meats, pork, and spicy dishes.
