The Syrah grapes were hand picked early in the morning and crushed into a fermentation bin. The fermentation was gently punched down twice a day. Upon completion of fermentation, the wine was pressed and put into a 2 year old French oak barrel. The wine was topped monthly and racked once during 16 months of aging.
