Skin Fermented Chardonnay. Insieme Wines 2016
Reserve Chardonnay was fermented on skins for 7 days and finished in Stainless Steel tank. It was aged for 18 months in New American / French Hybrid barrels and neutral tank for an additional 60 months. Sur Lie aged with regular stirring of lees.
It boasts a deep amber color filled with layers of honey, stewed apples with hints of Brule and baking spices. Firm tannins with a long lingering finish.
Insieme Wines 2020 Chardonnay was aged for 12 months in stainless steel. Its pale yellow color boasts a straw like hue. The bouquet is delicate, fresh and crisp. It opens with aromas of apple, sweet butter and cucumber. As it opens the aromas tend towards lemon, melon with a touch orange zest and fig. The mouthfeel is lush, round with a bright crisp finish. The palate opens to layers of white peach, apricot with hints of spice backed by nice minerality and brine. With a little time, it opens to layers of straw, chamomile and sweet cream. This is a beautiful easygoing Chardonnay. Watch it change as it opens.
Insieme Wines 2018 Sauvignon Blanc was aged for 24 months in Stainless Steel and neutral cask to enhance its profile and mouthfeel. 20% of the finished wine was aged in slightly neutral French oak barrels. The grapes were destemmed, crushed and soaked on skin for a full 24 hours prior to pressing to extract their natural tannins and phenolic composition. It has a rich golden color derived from its skin.
The bouquet is fresh and crisp. It opens with aromas of Acacia, white peach and melon. As it opens the nose tends towards passion fruit, canned asparagus with a touch of herbs and lemon soufflé. The mouthfeel is crisp and dry, medium+ viscosity but still smooth and lush. The palate opens to roasted pears, lemon curd, melon and grapefruit. With a little time, it opens to Lychee fruit, gooseberry with hints of canned peas. The finish is fairly long for a Sauvignon Blanc with hints of barrel lees, honey, gunflint and honeysuckle.
Insieme Wines 2021 Dry Riesling was fermented and aged for 12 months in Stainless Steel. The grapes were destemmed, crushed and immediately pressed. It has a pale yellow color which is typical for this style of production.
The bouquet is fresh and crisp. It opens with aromas of apricot, pear and green apple with hints of lime zest and petrol. As it opens the nose tends towards a slight touch of petrol mixed with jasmine tea, grapefruit and wet stone. The mouthfeel is crisp and dry, medium viscosity with a long lush finish. The palate opens to lemongrass, lime, grapefruit and petrol. With a little time it quickly turns a bit floral and herbal with hints of tea leaves and lilac. The petrol dissipates and opens up to white peach, wet stone and ever slight hints of pine (interesting for this variety), which is why I love Finger Lake Riesling. The finish is smooth with bright acidity to carry lasting notes of fruit and minerality.
Our goddess Rose begins with a traditional French approach where we bleed (Saignee) off juice from the production of our signature reds and ferment it in Stainless Steel. It then ages in Stainless Steel tanks for six to eight months. In 2019 we blended in a touch of Chardonnay for a more lush mouthfeel and aromatics.
The mouthfeel is smooth and lush, softened by a touch of Chardonnay, it opens with ample flavors of strawberries, honeydew melon with hints of violets carried forward from the components of merlot and cabernet sauvignon. The finish is silky and fairly long with tiny hints of herbal essence that turn more towards peach as it opens up.
