Fermented and aged in our concrete egg, this Italian white shows off minerality with notes of ocean spray and alfalfa. Fresh picked green skinned apple on the palate is balanced by a citrusy finish.
Winemaker Notes - Grapes were hand harvested from Dos Amigos Vineyard in August 2022. Whole cluster pressed and cold settled to concrete egg. Fermented at low temperature for 3-4 weeks. Aged in concrete egg for 5 months and stainless-steel tank for 2 months. Filtered prior to bottling in June 2023.
