Apple(s): 100% Gold Rush. Gold Rush apples are a cross between Rome Beauty, Melrose, Illinois #2, and Golden Delicious. They are known to be rich, complex, spicy, and tangy.
Vinification: Cold pressed late season Gold Rush Apples. Fermented in stainless steel and left sur lie for an extended period before racking.
Ageing: Neutral Chardonnay barrels for 6 months and then bottled aged for an additional 6 months before release.
Taste/Armoa: Notes of honey, apple peel and spice. Round, rich and soft of the palate.
