Seyval has the reputation of being a “poor-man’s Chardonnay”, but I wanted to give it a chance to be more than just an imposter. I wanted to stylistically give the wine its own identity by barrel fermenting followed by barrel aging. For this wine, we had complete control throughout the entire process as the grapes were grown right here, in our vineyards. Deciding the level of ripeness and conditions of the harvest were the first step to guiding the style. The grapes were harvested on September 17th, 2020, slightly later in the season than in previous years, to get the sugar level higher and the acid level lower to be in balance for the oaked style I had in mind. The fermentation took place in single-dump Chardonnay barrels. The CY3079 yeast strain worked beautifully along with the medium plus toast French oak to give the wine a unique flavor. Following a brief aging on light lees to add some creaminess to the mouth feel, the wine was racked off the lees and right back into the same barrels for continued aging with oak contact. It spent an additional seven months in the oak barrels before finally being racked to a stainless steel tank for filtration, cold stabilization and finally bottling, which occurred on September 16th, 2021; nearly one year to the day after harvest.
