A difficult wine to pronounce, yet one of my favorites to enjoy. I’ll help you out: geh-VURTZ-tra-MEEN-er. Just pretend the “w” is a “v” and that you get “meaner” from your frustration with trying to say it. Anyway, this white grape is a delight to work with since you never quite know just how spicy it will turn out. Originating from the Yakima Valley AVA, I’m a little bit jealous of these grapes as they had a view of my favorite mountain, Mount Rainier, just to their Northwest during their growing season. Production work began here at The Vineyards at Pine Lake on October 4th, 2020. Being from the West coast, the juice needed a slight acid adjustment to match the delectable aromas and make the wine more balanced on the palate. Cold fermented at 58 ̊F with Alchemy I yeast, the wine finished up in one month on November 9th. I quickly clarified the wine to preserve the freshness of the bouquet. It was aged until ready in stainless steel tanks and then bottled on October 15th, 2021.
