Vinification: From the Siletto Family Vineyards in San Benito AVA, 100% Merlot (Caleri Vineyard was fermented whole berry with pushdowns three times a day for eighteen days. After eighteen days, grapes were pressed into a concrete tank where they completed primary fermentation with wild yeast and were blended at bottling with minimal SO2 added (Sub 30 PPM).
Wine Profile:
With hints of blackberry and currant, this merlot is the perfect balance of fruit and tannin. Like right bank Bordeaux with that California natural wine flare. Added smoothness and focus on fruit from concrete elevate with little to no funk and moderate tannin.
