This Rosé is made from Estate grown Dijon 115 Pinot Noir combined with Fruit from the Amondt Block of 40 year old own rooted Pommard Pinot Noir. It’s a Saignée method Rosé where we crush everything up for our Pinot Noir then after about 24 hours and before we start the ferment we pump out about 10% of the juice that’s in contact with the skins and put it in a tank by itself. From there we make it as a white wine.
