This Hefeweizen inspired sparkling mead is created from Goldenrod honey which has fruity and butterscotch-like notes. We ferment it with hefeweizen yeast which produces subtle banana and clove esters and then dry hop it with East Kent Goldings. Honey's natural acidity makes this mead taste something like a cross between a Hefeweizen and a sour ale, but with the unique essence of honey. Serve chilled. Bottle Conditioned.
