Ever do the opposite? Ever do a full throttle test against hypothesis? Because the original hypothesis doesn't look like it had ever been tested--against? I wine lore, it is widely assumed that the very best wine location to age oak barrels is in caves -- constant cool temperature and humidity. While it may be true, I have never seen a full study on this aspect of winemaking. So we ordered new barrels in May, placed them in the barn and put Montepulciano in them in early June. Bottled October 2023. WOW! The fruit, the tannins, just wonderful and aromatic, lots of raspberry notes. And the oak? Yes, it is there but it is very complimentary to this wine. The bungs (the seals on top of the barrels) always were sweaty, so you knew something was happening. Super complex, super smooth, a gem of a wine!
