This is version 1 of our 2022 Chardonnay. Over the many years of making chardonnay, we have found that this variety needs a little assistance from time to time to get the finish to perfection. Added in small quantities which are impossible to distinguish in the wines have been chardonel, aromella, traminette, vignoles and colombard. We bottled our 2022 on 12/7/2022. Pre-filtered, we thought we'd add traminette to the blend, however once I taste tested the wine as it was being filtered, no change! This wine is 100% Chardonnay. Long finish, lots of classic chardonnay fruit. The key for our chardonnay wines is sur-lee winemaking, the process of aging the wine on the spent yeast cells, known as lees. Autolysis, the breaking down of yeast cell walls to release proteins into the wine give our chardonnay a great boost. And if anyone knows Jim, he loves chardonnay. Hint.
