Single-varietal pet-nat cider. 100% organic dry-farmed Wickson, Vulture Hill Orchard, Sebastopol. This variety was bred in Humboldt County, Northern California, by apple breeder Albert Etter, in the early 1900s, and introduced for sale in the 1940s. Native yeasts, unfined, unfiltered, minimal sulfites. Bottled to complete fermentation as pet-nat. Undisgorged. Pours straw gold with slight haze, lively, fine mousse. Summery, dry but with perception of sweetness, with notes of lime, meringue, lemon curd, and hard ribbon Christmas candy. Mid-palate pop of citrusy acidity. Delicious!
