Coferment of organic, dry-farmed Newtown Pippn from Vulture Hill Orchard in Sebastopol and a mix of feral, wild, native, and hybrid grapes including old-vine Alicante Bouschet and mystery red grapes growing through blackberry brambles, pine trees, and willow along our farm’s fenceline; and other wild, native, and teinturier mystery grapes. Partial-cluster maceration for 28 days, native yeasts, pressed off by hand. Unfined, unfiltered, minimal sulfites. Pours deep amber orange. Pronounced minerality and tannin like rock dust and tannic diamonds, good body, notes of dark cherry and dark plum, rosehips on the finish. Delicious paired with fatty pork chop, brisket, and other meals that would benefit from balanced acidity.
