Our champagne-style estate cider. Methode traditionnelle. 40 varieties of apples, crabapples, and pears all grown with organic, no-till practices at our home orchard at Fireball Farm, Sebastopol. Pressed at the farm and fermented with native yeasts in neutral French oak barrels. Unfiltered, minimal sulfites. En tirage for 15 months. Hand riddled and disgorged. Chill well. Soulful, earthy, lovely, with lots of structure and texture. 38 cases produced
