The 2021 Twilight is a new wine for Seven Birches, made using a process called "saignée" or "bleed." Four different red grapes (Syrah, Tempranillo, Merlot, Cabernet Sauvignon) were crushed and quickly drained to get a very light red juice before fermentation. A small portion of Pinot Grigio was blended in to give it an off-dry, complex floral aroma and bright red berry fruit flavor. Bring this unique wine to your next party and enjoy the twilight.
