2021 Sass Sauvignon Blanc, Walnut Ridge Vineyard: Lime zest and a hint of passion fruit with spicy minerality and floral aromas. Gently whole-cluster pressed, then cool fermented in neutral French oak and stainless steel barrels. Layered, with great balance. At harvest (9/24/2021): Brix – 22.6; pH – 3.12; TA – 8.1. At bottling on 9/30/21: alc. – 13.2; pH – 3.3; TA 6.5. 182 cases made.
