Bright cherry and juicy cranberry aromas and flavors with underlying peppery spice, lovely minerality and lengthy finish. Lightly pressed after 17 days of cool fermentation, the wine was aged for 23 months in neutral French oak barrels. At harvest (9/24/2021): Brix – 23.8; pH – 3.28; TA – 5.8. At bottling (8/25/2023): alc. – 14.2%; pH – 3.36; TA 6.5. 98 cases made.
