Sweet black cherry, black raspberry and a hint of pepper and earth, silky texture and mature tannins. Evolves endlessly in the glass. At harvest: Brix – 22.4-23.4; pH – 3.38-3.60; At bottling: alc. – 13.8; pH – 3.56; TA – 5.7.

Notes

Grape are hand-harvested, de-stemmed, leaving 75 percent of the berries uncrushed, then dropped by gravity, not pumps, into 1.5-ton open-top fermenters for two weeks before a gentle press.
