- 2021 Sass Estate Pinot Gris: Fruit from our estate Wild Winds Vineyard, and our first single-vineyard pinot gris since 1998. Aromas of fall russet apple, pear and pie spice open on the palate and finish with a little racy citrus. Fresh, bright fruit with mineral complexity. Fermented cold in stainless steel. At harvest on 10/5/2021: Brix – 22.8; pH – 3.28; TA – 5.6. At bottling on 6/8/2022: pH – 3.29; TA – 5.6; alcohol 13.8%. 444 cases made.
