Each year, Pinot Gris is consistently our first varietal to reach optimum maturity. In 2021, we picked the grapes on August 13th with an incredible amount of acid for the sugar; pH @ 3.3, Brix @ 21.
Because of the exceptional cleanliness of the grapes, we changed the way we work on the coarse lees pre-fermentation to allow for more extraction. This resulted in a gain of floral aromatics. After fermentation was complete, the wine was aged 6 months in a stainless steel tank.
Best when served slightly chilled, as the soft mouthfeel will open up to lingering rose and lychee notes.
