APPLE VARIETIES: Organic Washington dessert apples, primarily high-acid varieties such as heirloom Granny Smith. CIDERMAKER NOTES: This wine goes through all of the stages of apple metamorphosis: it begins as apple juice which we ferment into an apple wine. We then fortify this wine with our apple brandy and back-sweeten with apple juice. The finished wine ages with oak spirals or in a barrel. This is considered a ‘fortified wine’ and not a distilled spirit. Similar to the French method “vin doux natural,” whereby wines are fortified with a neutral spirit to stop the yeast before fermentation is complete and all sugars have been converted into alcohol. The wines thus retain some naturally occurring sugar, perceived as sweetness on the palate. Our brandy is custom-distilled by Admiralty. SERVING SUGGESTIONS: Serve at room temperature in a port glass as a digestif or after-dinner wine. Lovely on the rocks, in a cocktail or in a hot toddy on a winter evening. PEAR VARIETIES: Hendre Huffcap, Yellow Huffcap, Romanian Perry grown in Finnriver’s organic orchard and wildcrafted seedling pears from the Olympic Peninsula. CIDERMAKER NOTES: Fermented primarily from Finnriver organically grown traditional perry pears. As with cider apples, special pear varieties are used to make Perry, which are higher in tannin and acid than eating or cooking pears. Perry pears are thought to be descended from wild hybrids, known as wildings, brought to northern Europe by the Romans. Perry pears often have higher levels of sugar than cider apples, including unfermentable sugars such as sorbitol, which can give the finished drink a residual sweetness. After fermentation, we also add organic cane sugar to round out the acidity and balance the strong astringent tannins. Historically, in western France, fresh apple juice was blended with cider brandy to preserve the flavors throughout the year. This operation, known as ‘mutage,’ was done quietly on the family farm and, for centuries, the method was a closely guarded secret. The result became the local apéritif, called Pommeau - from ‘pomme,’ meaning apple. A fine Pommeau blends strength, sweetness and delicacy. AROMA AND FLAVOR: Bright and clear, with a beautiful amber color and a rich range of aromas. Notes of bright, fresh apple followed by butterscotch and caramel, with a deep hint of vanilla.
