This naturally sparkling, single-varietal cider is made entirely
with Stembridge Cluster, a bittersharp apple variety which has
ample tannins and acidity and a steely structure. Traditional
Method in-bottle secondary fermentation and 14 months on the
lees before disgorging gives a creamy mouthfeel. 25 cases made.
