A traditional still apple wine, fermented from locally grown northern spy apples, pressed on Lain's traditional hydraulic mill. Crisp, bright, fresh nose of golden apples, meyer lemon, subtle tropical fruits, with camomile, hay and aromas of spice. The 12 months in barrel softened and broadened the palate, though, the acid stays fresh and mouthwatering.
