This wine was made by first fermenting locally grown northern spy apples, pressed on Lain's traditional hydraulic mill in barrels, before aging for a year on its lees. It was then primed, and bottled for a second fermentation to carbonate naturally. Sharp, fresh apple, citrus and tropical aromas leap from the glass, mingling with stone, flowers and herbs. The palate is lively and fresh, and the bubbles really enhance its brightness.
