Our Bittersweet Cider is crafted from a blend of more than 20 traditional English and French cider apple varieties grown in our orchard on Vashon Island, WA. Bittersweet cider apples are a class of apple varieties that create a richness of flavor and character that can’t be achieved with ordinary culinary apples. The “bitter” refers to the tannins in the apples that produce exceptional body, and mouthfeel. The “sweet” refers to the lack of acidity in the apples, creating a richness and depth to the flavor.

2021 Rosé Cider

Our Rosé Cider is created from a unique blend of red fleshed apple varieties, including Redfield apples from our own orchard. Unlike typical apple trees, in the Spring, the blossoms on the Redfield trees are bright pink, the leaves are a reddish bronze, and amazingly the flesh of these beautiful apples is red. When the apples are pressed the juice is a crimson color that lightens and clears into the blush rosé that you see in the bottle. Bright and fruity, this cider is certainly unique for its color but also delicious in flavor.

Made with 100% pears. Our Perry features seedling pears that are unique to Vashon Island, harvested from trees that were likely planted by homesteaders around 100 years ago. These Vashon pears are blended with true English perry pears. The Perry has a subtle sweetness, a delicate pear flavor, and lovely round tannins.

Sparkling Perry - Méthode Traditionelle

A sparkling 100% pear beverage, hand crafted with care. Using fruit harvested in 2019 and 2020, this perry was bottled for secondary fermentation in December of 2021. The perry was then disgorged in November of 2022. Delicate and refined, Sparkling Perry is perfect for a celebration.

Pommeau

Pommeau is a sweet apple wine created by blending apple brandy and apple must or young cider. We blend a new batch of pommeau each year during harvest season, and allow it to mature in neutral French oak barrels for two years before bottling. The brandy that we use is distilled from our own cider. And the residual sweetness is derived only from the apples. Perfect to serve as an apéritif or dessert wine.
