The 2019 Reserve Sauvignon Blanc is a different take on the the wine production process from our 2019/2020 Sauvignon Blanc. Each wine started our from our estate vineyard in Yamhill-Carlton AVA, and were farmed to maximize aromatics and fruit-forward notes. However, the Reserve was barrel fermented and aged for 18 months prior to bottling. The wine was aged on the lees; that is, the yeast from the primary fermentation was left in the barrel, a process that is also known as Sur Lie. The Sur Lie process builds a bigger mid-palate and creates a more round mouthfeel over time. The lees contact along with barrel aging contact createed a wine that is similar in mouthfeel and texture to an aged Chardonnay but with the fruitiness of a Sauvignon Blanc. Tasting Notes An elegant, full bodied wine with an earthy, herbacious aromas and hints of passion fruit, grapefruit and white peach. The taste follows the nose with berry flavors and gooseberry that gives it a tart punch at the finish. Food Pairing Goat cheese and asparagus tarts
