Every fall we ferment apple juice from fresh pressed, local, Alaskan apples in different styles and then make a custom blend for our sparkling wine. During blending and crafting we are careful to bring out the ultra crisp, dry apple flavor while preserving a finish that is a reminder of the fresh apple cider it started from.
