In the style of classic white Burgundy with a lovely stoniness and minerality. Created from one acre of Dijon clone Chardonnay planted in 2008 and aged in French oak barrels, one of which was new and three neutral. The barrels allow the wine to soften and become more integrated. The wine was stirred on the lees weekly for texture, then left to settle naturally for a month before bottling in September.
Suggested Pairings: Smoked salmon, pork tenderloin, crab, scallops in cream sauce.
