This popular Loire Valley (France) grape is aromatic as a younger wine –think dark stone fruits, such as cherries and plums in addition to raspberries and currants and reveals deep carmel and chocolate as it gains in age. A deep violet-colored dry red, Chambourcin is quite food-friendly. Enjoy now or allow the medium toast French oak, which adds structure, mouthfeel, and tannin, to age it to perfection. Chambourcin is excellent with sausages, strong cheeses, and of course with a succulent Kansas steak!
