A blend of Traminette and Vidal Blanc, this ice wine style offers and exceptional balance of flavors including apricot, passion fruit, honeysuckle, and peach with a lingering spice on the finish. The grapes were frozen for five months immediately after harvesting. Then, the frozen grapes are pressed in the extreme cold to extract the luscious nectar. In this process, the water content in each grape remains frozen in crystals, leaving only a few coveted drops of concentrated, intense liquid. The must was fermented to 11% alcohol volume, preserving 135 g/L of residual sugar. The wine was then transferred to seasoned French oak barrels for a six months maturation period, and bottled in June 2014
