An abundant harvest allowed 868 Estate Vineyards to once again make a Rosé that is mostly Cabernet Franc. The Rosé is produced in the Bordeaux tradition of saignée (bleeding of juice from a red wine). The pink juice is then treated like a white wine to promote crispness and fruit forward characteristics. Like the best of these wines, we consider our rosé a red wine meant to be chilled. Excellent as a “stand-alone” aperitif, this robust rosé will pair with, tuna sashimi, grilled salmon and anything from a backyard barbeque. The 868 Estate Rosé of Cabernet Franc is ready to consume anytime. Serve chilled. Tasting Notes 868 Estate Vineyards’ Rosé of Cabernet Franc is a robust, medium-bodied wine demonstrating surprising complexity and structure. With a pink, medium-salmon hue, the bouquet reveals fresh strawberry, citrus and honey with notes boxwood, fresh mushroom and green tea. On the palate, the wine’s red pedigree comes through with flavors of strawberry and orange blossom along with the suggestion of thyme, savory and other summer herbs. The finish lingers with spicy tones of black pepper and cedar.
