Brought in to widen the tasting profile Yonah offers, Tristen was given the challenge to craft a wine that mimics Eric's favorite German Rieslings...with American grapes. Tristen requested the grapes hang on the vine for an additional 10 days compared to when most Riesling winemakers would harvest, and believe it is shown in this vintage.
Slightly off-dry, and not overpowered by notes of green apple. There is a great acid to natural sugar ratio, which was obtained by chilling the wine down to arrest fermentation right at the perfect moment.
