While quince is still a relatively unknown fruit, at WildCraft we love to showcase the diverse flavors this ingredient offers. Elder Quince is a robustly floral cider made from quince varieties that are planted, grown, and harvested at the biodynamic WildCraft Orchard at Meadowview Farm. Three hand-picked quince varieties are shredded and lightly fermented on skin for two weeks prior to pressing, then naturally aged for six months, transforming the fruit into wine. This wine is blended with Jonagold apple cider and then cold-conditioned with elderflowers.

The Friends enhance native ecosystems and compatible recreation in the 4700-acre Mt. Pisgah area. Volunteers helped harvest the ingredients near the historic Seavey homestead within Lane County's Buford Park, reducing troublesome invasive plants that harm native habitats. The result is a floral and complex dry cider that helps support our natural heritage.

-Whole bletted medlar fermented in cider- The medlar is the cultivated predecessor to the pear, prized by cultures throughout antiquity. Though a rarity to find in modern times, there are still some orchardists who practice the cultivation of this ancient fruit. Reminiscent of delicately spiced apple butter when ripe, fermentation of medlar results in a delicious perry-like cider with aromatics of mulling spices and herbs.
