This batch was made with a mix of cider apple varieties co-fermented with Sambucus Nigra elderberries. Like a sparkling rosé, dry, light, and delightfully effervescent with a pronounced tart cranberry apple bite.

Notes

Slow cold fermentation to preserve the fragile aromatics present within the apple. Co-fermented with whole Sambucus Nigra elderberries. Aged "sur lie". Naturally carbonated using the traditional champagne method. Unfiltered, not disgorged.
