The goal with our Bethany Ridge Sauvignon Blanc is to produce an acid-driven, refreshing wine with a mid-palate density that reflects the quick ripening power of Bethany Ridge, more akin in many ways to Sauvignon Blancs coming out of the Loire. Each consecutive year we make slight adjustments both to the vineyard management, and with our cellar techniques, in order to move closer and closer to the zippy yet complex wine that we strive to make.
