2021 Galaxy 100% Barbera from Contra Costa. Practicing Organic. Wrapped in picking bins and left for carbonic maceration for 7 days. Then foot crushed right before being bucketed by hand into our Willmes and pressed. Settled in a flex tank for a few days then racked off into barrel. No topping, no S02, no fining or filtering. Hand bottled on a fruit day.
