2021 Cara Cara
Funny story. This was supposed to be a straight ahead Sauv Blanc skin contact but when we harvested it the same day as our Tempranillo, we over filled the Tempranillo bins. So we took about a 1/4 ton of it and added to the bin of Sauv blanc. Carbonic for 48 hrs, then foot crushed and macerated for another 3 days. Once done with fermentation, we topped with Riesling, Barbera rose, and anything else we had available. Cara Cara oranges have just the slightest hint of pink, just like this wine.
Yes topping, yes S02 (20ppm), no fining or filtering. Hand bottled on a fruit day.
